OATMEAL WAFFLES 
2 c. evaporated milk
2 tbsp. vinegar
2 c. quick cooking oats
2 eggs, separated
6 tbsp. butter
1/3 c. sifted flour
1/2 tsp. baking soda
2 1/2 tsp. baking powder
1/2 tsp. salt

Mix together, milk and vinegar. Stir in oats and let stand overnight in refrigerator. Beat in egg yolks and melted butter. Stir in flour with remaining dry ingredients. Fold in stiffly beaten egg whites. Bake in hot waffle iron. Makes 6 to 7.
