HONEY OATMEAL COOKIES | |
1 c. butter 1/4 c. honey 2 c. flour, plain 1 tsp. cinnamon 1 tsp. ginger or allspice 1 c. nuts, optional 1 c. brown sugar 2 eggs 1 tsp. salt 1 tsp. baking soda 3 c. quick cooking oats Cream butter, sugar and honey until light and fluffy; add eggs, one at a time, beating well after each. Mix well. Combine flour, salt, soda and spices. Add to creamed mixture. Stir in oats and nuts. Mix well. Drop by teaspoonfuls onto greased cookie sheets. Bake at 375 for 10 - 12 minutes. Cool 5 minutes before removing from cookie sheets. To let cookie become firm. Yield: 8 dozen. |
