OATMEAL MACAROONS 
1 c. solid shortening
1 c. brown sugar
1 c. granulated sugar
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/2 c. chopped walnuts
2 eggs, unbeaten
1 1/4 c. sifted plain flour
1 tsp. baking soda
1 tsp. salt
3 c. uncooked oatmeal

Beat thoroughly the shortening, sugars, vanilla and eggs. Sift the flour with the soda, salt and cinnamon and add to shortening mix. Mix thoroughly, then add in the oats and nuts by folding in.

Drop by teaspoonful on a greased baking sheet. Flatten if desired. Bake in a preheated 350 degree oven for 12 to 15 minutes. Cool about 2 minutes before removing. This makes about 5 1/2 dozen cookies.
