NORWEGIAN OATMEAL MACAROONS | |
2 c. quick Quaker oats (1 minute, not instant) 2 sticks butter, melted in saucepan 1 c. sugar 1 egg 3/4 c. flour with 2 tsp. baking powder 1 c. chopped pecans Pour the melted butter into the 2 cups oatmeal. Stir well, add the sugar and stir well, add the raw egg and stir, add the flour in which is mixed baking powder and finally add the chopped pecans. Drop by 1/2 to 3/4 teaspoons on cookie sheet. Press flat and you should have a 2 to 2 1/2 inch round raw cookie, about 15 to 2 cookie sheet that has been oiled with Pam spray. Preheat oven to 325 degrees and place cookie sheet in oven for 8 to 10 or 12 minutes until cookies are just turning brown on the edges. Remove cookies with spatula and place on wire racks until cool, the place in airtight cookie tin. This will give you 5 to 7 dozen in accordance with the size you make. |
