GRANNIE'S OATMEAL CRUNCHIES 
1/2 c. shortening
1 c. brown sugar
1 tsp. vanilla
1 egg, well beaten
1 c. plain flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 c. oats
1/2 c. pecans, coarsely chopped

Cream together brown sugar and shortening until light and fluffy. Add egg and vanilla. Sift flour, baking powder, salt, and soda. Stir into creamed mixture. Add oats and pecans. Drop by spoon onto cookie sheet. Bake at 350 degrees oven 8 minutes or until brown. Store in air-tight container.
