SPINACH RING WITH CHEESE 
2 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
1 c. cottage cheese
1/2 c. shredded Swiss cheese
1/4 c. grated Parmesan cheese
2 eggs
1/2 tsp. ground thyme
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. buttered cracker crumbs; optional

1. Combine all ingredients, except buttered crumbs, in a 2 quart mixing bowl. Blend thoroughly, pour mixture into a well buttered microwave-safe 6-8 cup ring mold. Cover with wax paper.

2. Microwave at power level 7 for 12-14 minutes, or until mold is set. Let stand, covered, 5 minutes. Turn out onto serving platter. Sprinkle, if desired, with buttered crumbs and fill with scrambled eggs or a creamed food. Makes 6-8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
