RHUBARB WINDSOR 
1 c. flour
1 c. sugar
1 tsp. baking powder
Pinch salt
1/2 c. shortening
1 egg
4 c. rhubarb
1 c. sugar
1 tsp. cinnamon

Mix flour, sugar, baking powder, salt and shortening like pie crust. Add unbeaten egg. Cut rhubarb in small pieces. Place in 9x9 inch pan. Sprinkle 2nd cup sugar and cinnamon on top and top with crumbly mixture. Bake 350 degrees until well browned, about 35 to 40 minutes. Serve with whipped cream or ice cream. May substitute 5 or 6 apples for rhubarb.
