CHICKEN SALTIMBOCA 
3 whole chicken breasts, split, boned, and skinned
1 tsp. salt
6 thin slices ham
1 tomato, peeled, seeded, and chopped
6 slices Swiss cheese
1/2 tsp. sage
1/3 c. dry bread crumbs
2 tbsp. Parmesan cheese
2 tbsp. minced parsley
4 tbsp. butter, melted

Flatten chicken breasts between sheets of waxed paper. Sprinkle each piece with salt. Top each with a slice of ham, chopped tomato, Swiss cheese and a dash of sage. Roll jelly roll fashion, securing with toothpicks.

Combine bread crumbs, Parmesan cheese and parsley. Dip chicken in melted butter. Roll in crumb mixture and place in baking dish. Bake uncovered at 350 degrees for 40-45 minutes.
