EASY PECAN PIE 
3 eggs, slightly beaten
1 c. light or dark corn syrup
1 c. sugar
2 tbsp. butter, melted
1 tsp. vanilla
1 1/2 c. pecans halves
1 unbaked 9 inch pie shell

In a large bowl stir first 5 ingredients until well blended. Stir in pecans. Pour into pie shell. Bake at 350 degrees for 50-55 minutes or until knife inserted halfway between center and edge comes out clean. Cool.

VARIATIONS:

For Chocolate Pecan Pie, add 4 ounces of chocolate squares to melted butter.

For Bourbon Pecan Pie, add 1/4 cup bourbon (or less) to mixture.
