ZUCCHINI CASSEROLE WITH SAUSAGE 
1/2 lb. sausage, cooked & drained
2 lbs. zucchini (4 c.)

Mix:

1 c. Bisquick
1/2 c. melted butter
3 eggs, slightly beaten
1 c. cheddar cheese, shredded

Mix all together with a small amount of salt and pepper. Put into a buttered casserole; top with more cheddar cheese and bake 1 hour at 350 degrees. Three medium zucchini equals 2 pounds.
