3 cups grated zucchini
1 small onion, grated
1 cup Bisquick baking mix
1/2 cup vegetable oil
3/4 cup grated cheese
1/4 tsp. salt
1/4 tsp. pepper
4 eggs

Combine all ingredients in large bowl. and beat until fluffy with whisk. Pour in casserole and bake at 350°F for approximately 40 minutes or until done in center.

Note: For microwave oven, bake approximately 8 minutes and turn casserole 1/2 turn and bake 2 minutes or until set in center.
