FRENCH FRESH PEACH PIE 
1 (10-inch) unbaked pie shell
sliced fresh peaches

Fill unbaked pie shell with fresh sliced peaches. Be sure to use plenty since they will cook down.

CUSTARD FILLING:

1 cup sugar
1/8 tsp. salt
2 tbsp. all-purpose flour
1 cup light cream, divided
1 egg
1 tsp. vanilla

Preheat oven to 425°F.

Into bowl, sift sugar and flour mixed with salt. Mix 1/2 cup cream into dry mixture.

Into remaining 1/2 cup cream, add egg and beat slightly. Add to sugar mixture. Mix well. Add vanilla. Pour mixture all over fresh peach slices.

Bake at 425°F for 45 minutes or until custard is set.
