POTATO DELIGHT CASSEROLE 
32 oz. frozen hash browns, thawed
8 oz. sour cream
1 c. chopped onion
1 can cream chicken soup
2 c. corn flakes
2 c. butter
16 oz. Cheddar cheese, grated

Melt 1/2 cup butter in bottom of 13 x 9 inch baking pan; top with thawed hash browns. Combine sour cream, onion, soup, and cheese in large mixing bowl. Add ingredients on top of hash browns. Crunch corn flakes and pour over ingredients. Pour 1 1/2 cup of butter over corn flakes and bake at 425 degrees for 45 minutes.

Use fresh not frozen hash browns. The brand is called Simply Potatoes and I find them in the dairy section. I used frozen one year and no one ate it. It's very rich but people do like it. My mother used to make it and instead of corn flakes, she topped it with 1 cup of plain crushed Lays potatoes chips BUT I am rating this based on the exact recipe above, not my mother's version.

Far too much butter. Mom made it with half that amount and it tastes just as good. :)
