POPE'S NUT TORTE 
This recipe gets its name from Pope's Cafeteria in St. Louis, Missouri where it was served regularly.

3 egg whites
1/8 tsp. cream of tartar
1/2 c. white sugar
1/2 c. brown sugar
1 tsp. vanilla
1/4 tsp. almond extract
3/4 c. graham cracker crumbs
2 tbsp. pecan pieces
Sliced bananas or peaches
Whipped cream
Sliced almonds
Cherry halves

Beat egg whites and cream of tartar until fluffy. Sift white and brown sugar together and add slowly to egg whites. Beat until glossy and stiff. Gently fold in vanilla and almond extract, graham cracker crumbs and pecan pieces. Pour into well greased 8-inch cake pan.

Bake at 300°F for 30 minutes. Cool in pan. Remove from pan. Top with fruit, then whipping cream, almonds and cherries.
