TIJUANA TRAIN WRECK | |
2 lb. ground beef 2 (15 oz.) cans tomato sauce 3 (5 oz.) cans tomato paste 6 cans water, tomato paste size 2 tsp. salt 4 tbsp. sugar 3 lg. onions, chopped 2 tsp. oregano 2 tsp. cumin 2 cloves garlic 2 tsp. chili powder 1 lg. bag tortilla chips 2 or 3 tomatoes, chopped 1 head lettuce, shredded 1 cucumber, chopped 1 green pepper, chopped 1 (12 oz.) can black olives, chopped 8 oz. sharp Cheddar cheese, shredded 1 (8 oz.) pkg. sour cream Brown beef and 1 chopped onion in a large pot. When onion is soft, add the tomato sauce, tomato paste, water, salt, sugar and seasonings. Simmer for 2 1/2 to 4 hours. Remove garlic cloves. Pile on plates in following order: tortilla chips, meat sauce, lettuce, tomatoes, onions, cucumbers, olives, green pepper, cheese and a scoop of sour cream. Makes 8 generous servings. |
