STUFFED SQUASH
4 lg. yellow squash
1 strip fried bacon (crumbled)
1 sm. onion (chopped fine)
3/4 c. cornbread (crumbled)
1/2 c. Velveeta or Cheddar cheese (grated)
Salt and pepper to taste

Wash and cut the ends off of the squash. Slice in half and put in covered Corning Ware dish with 1/4 cup of water. Cook in microwave on high for 12 minutes. Let set for 5 to 10 minutes. Drain off water then scoop out insides of squash and mix with crumbled bacon, cornbread crumbs, onions, and 1/2 cup cheese. Put mixture back into squash shells and top with grated cheese. Place in 350 degree oven uncovered for approximately 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
