STUFFED SQUASH | |
4 lg. yellow squash 1 strip fried bacon (crumbled) 1 sm. onion (chopped fine) 3/4 c. cornbread (crumbled) 1/2 c. Velveeta or Cheddar cheese (grated) Salt and pepper to taste Wash and cut the ends off of the squash. Slice in half and put in covered Corning Ware dish with 1/4 cup of water. Cook in microwave on high for 12 minutes. Let set for 5 to 10 minutes. Drain off water then scoop out insides of squash and mix with crumbled bacon, cornbread crumbs, onions, and 1/2 cup cheese. Put mixture back into squash shells and top with grated cheese. Place in 350 degree oven uncovered for approximately 30 minutes. |
