ZUCCHINI OR GREEN PAPAYA WITH
PORK AND SHRIMP
 
2 med. zucchini OR
2 green papaya
2 tbsp. cooking oil
2 cloves garlic, minced
1/4 c. sliced onion
1/2 c. sliced tomato
1/2 c. pork, thinly sliced
1/4 c. raw shrimp
1 c. water
1 tsp. salt
1/4 tsp. black pepper

Shell and devein shrimp. Trim zucchini (peel green papaya, if used) and cut lengthwise into thin pieces or about 1-inch; set aside.

Heat oil in saucepan and saute garlic until brown. Add pork and cook until tender. Stir in onion, tomato, and shrimp. Add water; stir and bring to a boil. Add zucchini or papaya, cover and continue cooking over moderate heat until vegetables are tender. Add salt and pepper; serve hot.
