CREAM OF CELERY SOUP 
1 1/2 c. chopped celery
1/3 c. chopped onion
1/2 tsp. salt
1 c. water
2 1/2 c. milk
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. white pepper
2 tbsp. butter

Cook celery, onion and salt in water, covered, for about 15 minutes. Do not drain. Add milk, flour, salt, and white pepper. Add to celery mixture. Cook and stir until bubbly. Stir in butter. Season.

I made a thick roux with butter and flour, I also added about a half cup of quick barley into the cooking celery and when it got done cooking I pureed it, added the roux and pureed celery and barley together. It was very good. I also added a clove of garlic.

Excellent Cream of Celery Soup recipe!! Like the can only SO MUCH better. I put in a 1/4 tsp. celery seeds also. Very simple to make.
