CREAM OF CELERY SOUP 
3 c. celery, cut in inch pieces
2 c. boiling water
1/2 tsp. salt
2 tbsp. flour
2 tbsp. fat
1 1/2 c. milk
1/8 tsp. pepper

Wash and scrape celery and cut into inch pieces; add water and cook until very soft and tender; rub through sieve. Heat all but 1/2 cup of the milk in double broiler. Melt fat; add flour and seasoning and add the 1/2 cup of the milk. Stir constantly until it thickens. Combine celery, thickened milk, and heated milk. Season and serve.
