CREAM OF CELERY SOUP 
3/4 c. diced celery
2 tbsp. chopped onion
2 tbsp. chopped green pepper
1/2 tsp. salt
2 c. water
3 tbsp. butter
3 tbsp. flour
2 c. rich milk
3/4 tbsp. paprika

Mix celery, seasonings and water. Cover and cook slowly until tender, about 20 minutes. Press through a coarse strainer. Melt butter and add flour, and when blended add milk and celery mixture. Cook 3 minutes, add paprika and serve.
