TORTELLINI ALL' AMATRICEANA 
1/4 lb. bacon
1/2 c. chopped onion
1 lb. or 1 lg. can Italian tomatoes, chopped
3/4 c. dry white wine
1 tsp. salt (I use garlic salt)
1/8 tsp. dried crushed red peppers
1 c. grated cheese
12-16 oz. tortellini, cooked and drained

Cook bacon until lightly browned; remove, drain and break into small pieces. Pour off half fat. Add onion and saute 5 minutes. Add tomatoes, wine, salt and red peppers. Bring to boil and cook over low heat 10-15 minutes. Add bacon. Taste for seasoning. Pour over tortellini and sprinkle with cheese. Mix and serve. Serves 4.
