ANNA'S ITALIAN CROCK MEATBALLS 
1-2 lb. finely ground alligator meat (or other, if not available)
1 box Italian bread crumbs
1 med. raw egg
1/8 tsp. salt
1/8 tsp. cayenne
Fresh mushrooms, cut in sm. pieces (optional)
1/2 tsp. minced onions
1/2 tsp. green onions
1/2 tsp. parsley
1/2 tsp. bell pepper

Mix all ingredients with your hands while gradually adding bread crumbs. Roll into whatever size balls you want. Keep a glass of cold water on the side to dip your fingers in occasionally, which will help the meat mixture from sticking to your hands. Brown the meatballs slightly and drain on paper towels. Then add to red gravy (recipe above). Cook 2-3 hours. Serve over favorite pasta.
