TURKEY MEATBALLS ITALIAN - STYLE 
1 slice firm-textured white bread, crust removed
2 tbsp. chicken broth or skim milk
1 lb. lean ground turkey
1/3 c. minced onion
3 tbsp. finely diced green bell pepper
1 garlic clove, crushed
2 tbsp. grated Parmesan cheese
3/4 tsp. salt
1/4 tsp. pepper
1 tbsp. flour
1 tbsp. olive oil

1. In a medium bowl, soak bread in broth until softened. Mash to a paste. Add turkey, onion, bell pepper, garlic, Parmesan, salt and pepper. Mix with your hands to blend well. Form turkey mixture into 8 meatballs.

2. On a plate, season flour with additional salt and pepper. Roll turkey meatballs in seasoned flour to coat lightly.

3. Heat oil in large nonstick skillet. Add meatballs and cook over medium heat, turning until browned and crusty outside and cooked through to the center, 15-20 minutes.

I have tried many forms of Italian Turkey Meatballs and this was the best. I am not a big fan of ground turkey, however, my wife will not eat red meat. Most of the turkey recipes compromise flavor for being more healthy. Not to mention, it gets really dry!! Not this recipe. The meatballs had plenty of flavor and were moist. I used a red bell pepper instead of a green bell pepper and after I cooked the meatballs in the pan, I slow cooked them in the sauce for about 2 hours. I highly recommend this recipe.
