MEATBALLS IN ITALIAN SAUCE 
1 lb. ground beef
2 eggs
1/8 tsp. pepper
1/2 c. flour
1 large onion, chopped
1/3 c. celery, chopped
4 c. canned tomatoes, drained
1 tbsp. salt
1/4 tsp. pepper
1/8 tsp. chili powder
1/3 c. parsley, chopped
1 whole garlic clove
1/8 tsp. garlic, finely chopped
1 tsp. salt
1/4 c. Parmesan cheese

Blend together ground beef, 1/8 teaspoon garlic, eggs, salt, pepper and Parmesan cheese. Shape into small balls, allowing 3 tablespoons for each. Roll in flour and pan-fry until well browned. Meanwhile, prepare Italian sauce.

Italian Sauce:

1/4 c. shortening
1 garlic clove, chopped
3/4 c. tomato paste or sauce
1 c. water
1 tbsp. sugar
1/8 tsp. allspice
1/4 tsp. thyme
1 bay leaf

Pan-fry onion, 1 garlic clove and celery in shortening until browned. Add remaining ingredients and simmer for 45 minutes. Remove whole garlic clove. Add browned meatballs; heat thoroughly and serve on cooked noodles or spaghetti. Sprinkle Parmesan cheese on top if desired.
