BAKED EGGPLANT WITH SEAFOOD | |
2 lg. eggplants 1/2 loaf French bread, wet 2 eggs 1 lb. shrimp, cleaned and deveined 1 tbsp. thyme 1/2 stick butter Salt, pepper, red pepper to taste 1 lb. lump crab meat 1 onion 3 green onions 1 c. celery, finely chopped 2 tbsp. parsley 3 tbsp. oil Boil eggplant. Cook, peel, drain. Add onions, parsley, thyme, celery and squeezed out bread. Add eggplants, and mix well. Add shrimp, crabmeat and eggs. Fry in oil with 1/2 stick butter. Put in large baking dish. Sprinkle with bread crumbs and bake 20 minutes at 350 degrees. |
