ENCHILADA CASSEROLE 
1 lb. ground beef / hamburger
1 med. onion, chopped
1 can enchilada sauce
1 can cream of chicken soup
Salt and pepper
1 can cream of mushroom soup
1/4 cup milk
1 can green chilies, chopped
1/2 lb. shredded Longhorn cheese
Corn tortillas

Brown hamburger and onion; add salt and pepper. Drain grease. Add enchilada sauce, chicken soup, mushroom soup, chilies and milk. heat until hot. Fry tortillas in hot oil. Drain.

In 2-quart casserole dish, put meat mixture on bottom then 2 tortillas. Repeat. End with meat mixture on top. Sprinkle on cheese. Bake at 400°F for 20 minutes. Let set 5 to 10 minutes before serving.
