BAKED FISH 
4 tbsp. butter
Juice of 1/2 lemon
1/2 tsp. garlic powder
2-3 chopped scallions
1/2 c. mayonnaise
1/4 c. sour cream
1/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. tarragon
3/4 tsp. paprika
1 lb. fish fillets

Melt butter with lemon juice and garlic powder. Cover a flat metal pan with foil and smear with a little of the lemon butter. Dredge fish in lemon butter and place in pan. Mix all other ingredients in the lemon butter melting pot, then spread onto fish. Sprinkle with paprika. Bake at 400 degrees until browned and fish becomes flaky.

You may also slip a few spears of raw asparagus beneath each fish piece and it comes out perfect - a delightful surprise.
