1 pkg. UNCLE BEN'S® chicken flavor rice (cook by pkg. directions, omitting butter, cool)
4 green onions (spring onions, sliced thin
1/2 green pepper, chopped
12 stuffed green olives, sliced
2 (6 oz.) jars marinated artichoke hearts
3/4 tsp. curry powder
1/3 c. mayonnaise

Add onions, peppers, and olives to prepared, cooled rice. Drain artichoke hearts (reserve marinade) cut and add to rice. Mix mayo, curry and artichoke marinade into rice mixture. Serve cool. (Double for a large group)
