BREAST OF CHICKEN AMANDINE 
1 c. (6 oz.) Oh Canada wild rice
8 chicken breasts, cooked & sliced
Salt & pepper
1/2 c. green onions, finely chopped
1/2 c. fresh parsley, finely snipped
1 c. chopped mushrooms or one (4 oz.) can
2 c. chicken broth
1/2 c. Parmesan cheese
N.B. use any other rice too, it's O.K.

Preheat the wild rice using basic cooking method. Drain well. Lightly salt the chicken. Place in a 9 x 13 inch pan and cover with the cooked rice. Sprinkle onion, parsley, mushrooms, and cheese over the rice. Pour broth over all the ingredients and place butter in dots over the top. Cover with aluminum foil and bake at 375 degree oven for 18 to 20 minutes. Brown 6 ounces of sliced almonds in 2 tablespoons butter over medium heat, stirring constantly. Before serving, sprinkle with buttered almonds and garnish with parsley. Makes 8 servings.
