RHUBARB PECAN MUFFINS 
3/4 c. sugar
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3/4 c. chopped pecans
1 egg
1/4 c. vegetable oil
2 tsp. grated orange peel
3/4 c. orange juice
1 1/4 c. fresh or frozen rhubarb

Mix all ingredients together. Pour into greased muffins pan.

Bake at 375°F for 15 - 20 minutes.

Makes 12 muffins.
