RHUBARB MUFFINS | |
1 1/4 c. brown sugar 1/2 c. oil 1 egg 1 tsp. vanilla 1 c. buttermilk 1 c. rhubarb 1/2 c. walnuts 2 1/2 c. flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt TOPPING: 1 tsp. melted butter 1/2 c. sugar 1 tsp. cinnamon Mix topping ingredients well. Mix together muffin ingredients; put dough in muffin tins and put topping on each uncooked muffin. Bake at 350 degrees for 20 to 25 minutes. |
