VEGETABLE SOUP (Skinny Soup) 
1 lb. soup bone with meat
2 tbsp. salt
1/2 onion, minced
1/8 tsp. pepper
3/4 c. diced celery
2 c. shredded cabbage
1 #2 can tomatoes
3 1/2 qt. cold water
1 garlic clove, minced
2 tbsp. minced parsley
1 c. cut green beans
2/3 c. peas
1 c. carrots, sliced
2 tbsp. green pepper, chopped

Combine beef, water and salt; bring to a boil and skim. Cover and simmer 4 hours. Remove bone and skim again. Add remaining ingredients, cover and simmer about 30 minutes or until vegetables are tender.

I cook the soup bone and meat the day before, refrigerate and remove any fat before adding the vegetables.
