1/2 c. mashed potatoes
1 tsp. vanilla
1 box confectioners' sugar
Peanut butter
Few drops lemon juice

With mashed potatoes warm, start adding sugar until the consistency is to roll out. Roll out to about 1/4 inch thick, spread with peanut butter and roll as a jelly roll. Place in refrigerator wrapped in waxed paper until firm. Cut into slices when ready to serve.
