MAINE POTATO CANDY 
3/4 c. cold plain mashed potato
4 c. confectioners' sugar
4 c. shredded coconut
1 1/2 tsp. vanilla
1/2 tsp. salt
3-4 sq. chocolate (melted)

Mix all ingredients except the chocolate, stirring until mixture is real stiff. Press white mixture into a well buttered 9x13x2 inch pan or drop from teaspoon onto waxed paper. Allow to dry out. Cover with the melted chocolate. (If you add a little butter to the chocolate as it melts, it will make the chocolate spread better.) This freezes well.
