MAINE POTATO CANDY 
3/4 cup cold mashed potatoes
4 cups confectioners' sugar (use a 1 lb. box)
4 cups shredded coconut, chopped
1 1/2 tsp. vanilla
1/2 tsp. salt (optional)
4 (1 oz. ea.) baking chocolate squares

Mix potatoes (plain - no butter or milk added) with confectioners' sugar. Stir in coconut and vanilla; blend well. Press into 1 large or 2 small pans so that candy will be about 1/2-inch thick.

Melt chocolate over hot water. (Do not allow water to boil; use a double boiler).

Note: If chocolate gets too hot it may be streaky when hardened.

Pour chocolate on top of candy. Cool and cut into squares.

Does anyone know what type of chocolate goes on top? Baker's sweetened or unsweetened and will it harden or be a gooey mess? I'm trying to recreate my mins potato candy.
