MAINE POTATO CANDY 
3/4 c. cold mashed potatoes
4 c. confectioners' sugar
4 c. shredded coconut, chopped
1 1/2 tsp. vanilla
1/2 tsp. salt
4 sqs. unsweetened chocolate

Mix potatoes (no butter, milk or salt added) and confectioners' sugar. Stir in coconut, vanilla and salt; blend well. Press into one large or two small pans so that candy will be about 1/2 inch thick. Melt chocolate on top of candy, spreading evenly. Cool and cut in squares.
