POTATO CANDY 
1 sm. potato, boiled, drained, mashed, and cooled
1 c. peanut butter
1 box powdered sugar

Mix potato with powder sugar a little at a time until most of box is used. On a sheet of waxed paper, dust with powdered sugar. Roll out potato mixture like dough to 1/4 inch thickness. Spread peanut butter evenly. Roll up jelly roll style. Press edge shut. Chill and slice. Keep refrigerated.
