POTATO CANDY 
1/3 c. cold mashed potatoes
1 3/4 c. powdered sugar
2 2/3 c. flaked coconut
18 to 24 oz. sweet, semi-sweet, or mint chocolate or almond bark (whichever you prefer)

Mash cold, cooked potatoes. (Do not add milk or salt as you do for table use.) Combine powdered sugar and coconut with potatoes. Knead together and form into small balls. Chill these balls well. Then dip in sweet, semi-sweet, or mint chocolate that has been melted over hot water. They taste like Mounds Bars. If you wish, you may also add an almond in the center of the ball, then they will be like an Almond Joy.
