CHICKEN IN SAUCE (FRENCH) 
6 chicken breasts
3 tbsp. oil
3 tbsp. butter
3 tbsp. flour
1 c. chicken broth
1/2 c. cooking wine
2 cans or fresh mushrooms
2 tbsp. parsley flakes
2 tbsp. chopped onion
Salt and pepper to taste

Brown chicken breasts in oil. Remove breasts when brown. Add butter. Add flour to the pan; stir. Add chicken broth and cooking wine. Cook and stir until thick. Add mushrooms and juice, parsley flakes and onion. Salt and pepper to taste. Pour over chicken breasts in a casserole. Bake at 350 degrees for 1 hour. Serve over rice. Serves 6.
