FRENCH STYLE BEEF WITH WINE 
6 strips bacon
1 chopped onion
1 chopped carrot
3 lb. lean beef, cut in cubes
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. flour
3/4 c. red wine
1 tbsp. tomato paste
2 cloves garlic, crushed
1/2 tsp. thyme
1 bay leaf
6 to 8 sm. onions
1 lb. mushrooms

Cut bacon into small pieces and brown. Add onion and carrot and brown. Add beef cubes. Sprinkle with sugar and brown on all sides. Add salt, pepper and flour. Toss lightly. Add 1/2 cup red wine. Mix tomato paste with remaining 1/4 cup wine and add. Add garlic, thyme and bay leaf. Pour into casserole. Bake 3 to 4 hours at 325 degrees. One half hour before serving, add onions and mushrooms. Finish cooking and serve.
