APPLE CAKE 
2 tsp. cinnamon
5 tsp. sugar
4-5 apples, cubed (green or McIntosh)
3 c. sifted flour
1 c. vegetable oil
1/4 c. orange juice
2 1/2 tsp. vanilla
2 c. sugar
4 eggs
3 tsp. baking powder

Mix first 3 ingredients and set aside to blend. In large mixing bowl mix the remaining ingredients and beat together until smooth. Then stir in 1 cup broken walnuts. Pour 1/2 the batter into a well greased 10 inch tube pan, arrange 1/2 the apple mixture over it. Pour in the rest of the batter and arrange the remaining apples on top of batter. Bake at 350 degrees for 1 1/2 hours. Allow cake to cool in pan. May be frozen.
