APPLE CAKE 
5 or 6 apples (Green or Winesap)
2 tsp. cinnamon
5 tbsp. sugar
1 c. oil
1/4 c. orange juice
2 c. sugar
4 eggs
3 tsp. vanilla
3 c. flour
3 tsp. baking powder
1 tsp. salt

Peel and cut apples in small chunks and place in bowl. Sprinkle in 2 teaspoons cinnamon and 5 tablespoons sugar. Set aside.

Mix together oil, eggs, orange juice, 2 cups sugar and vanilla. Beat well. Add flour, baking powder and salt. Batter will be thick and sticky. Pour 1/2 batter into a greased and floured tube pan. Arrange half of apple mixture on top, then remaining batter and rest of apples. Bake at 350 degrees for 1 to 1 1/2 hours. If desired nuts can be added to apples.
