SALMON WITH TARRAGON SAUCE 
1 1/2 lbs. salmon
2 tbsp. butter
1/8 tsp. salt
1/8 tsp. pepper
2 tbsp. lemon juice
1/4 c. white wine
1/2 tsp. tarragon

Rub salmon with butter and place in greased pan. Mix remaining ingredients and pour over fish. Bake, uncovered in 450 degree oven (10 minutes per inch of salmon).
