TARRAGON SALMON STEAKS 
4 salmon steaks (6 oz. each)
1 med. size onion, sliced
1 tbsp. chopped fresh tarragon or 1/2 tsp. leaf tarragon, crumbled
1/4 c. chopped parsley
2 tbsp. fresh lime or lemon juice
Ground white pepper

Arrange salmon steaks on heatproof plate. Sprinkle with onion slices, tarragon and parsley. Pour lime juice over all; sprinkle with pepper. Set plate on rack in wide pot or skillet over gently boiling water. Cover pot with tight fitting lid. Steam 9-10 minutes for each inch of thickness just until fish flakes when pierced with fork.
