ROMA MEAT LOAF 
2 lbs. ground beef
2 eggs
1/2 c. seasoned croutons (crushed)
1/4 c. chopped onions
1/4 tsp. oregano
Salt and pepper to taste
1/2 tsp. garlic salt
1/3 c. tomato sauce
1 (4 oz.) pkg. shredded Mozzarella cheese
1 (4 oz.) can mushrooms, pieces and stems

Mix first seven ingredients with tomato sauce. Place on wax paper. Flatten into 10x12 inch rectangle. Sprinkle with cheese and mushrooms. Roll as for jelly roll. Place in pan. Bake for 1 hour at 350 degrees. Pour this sauce over meat the last 15 minutes.

SAUCE:

18 oz. can tomato sauce
Plus remainder of sauce from meat loaf
1/4 tsp. garlic salt
1 tsp. sugar
1 tsp. oregano
Dried parsley flakes

Cook together for 15 minutes before you put it on meat loaf.
