BLUE CHEESE DRESSING 
1/4 lb. blue cheese (room temperature)
3/4 c. olive oil
1/4 c. vinegar
1 c. sour cream
Minced garlic to taste
Pepper to taste

Mash cheese; add 1/4 cup of olive oil and blend until smooth. Add vinegar and mix. Add sour cream and mix well. Add remaining oil and seasonings; mix until well blended. Refrigerate.
