ALASKAN PADDOCK IN A BUTTER DILL
REDUCTION
 
1/2 cup milk
4 tbs butter
5 tsp fresh chopped dill
4 pieces of paddock thawed

heat the milk and butter just below boiling. Rub salt and pepper into the fish and cook over high heat in a few tsp. of olive oil, at the last second add the dill to the milk and butter then pour over the fish. Cover, let it reduce till it turns a nice golden colour and is thickened. Serve beside Steamed white rice. Also A Sweet White Reisiling goes well
