COFFEE LIQUEUR 
4 c. sugar
1.2 c. instant coffee powder
3 c. water
3 c. vodka OR rum
1 tbsp. vanilla extract

Combine sugar, instant coffee powder and water in saucepan. Stir over low heat until sugar and coffee dissolve. Bring to a boil, stirring constantly. Keep on very low heat 30 minutes. Cool. Add vodka and vanilla. Mix well. Pour into clean glass containers with tight fitting lid. Let mellow at least 1 week. Use as a substitute for Kahlua (with vodka), Tia Maria (with rum). Makes about 3 pints.
