NUTTY PUMPKIN BREAD PUDDING | |
2 slightly beaten egg yolks 1 c. canned pumpkin 1/2 c. packed brown sugar 1 tsp. cinnamon 1/2 tsp. nutmeg 2 c. milk 4 c. bread cubes 1/2 c. chopped pecans 1/2 c. raisins 1/2 c. snipped dates 2 stiffly beaten egg whites Combine egg yolks, pumpkin, brown sugar, and spices. Stir in milk. Fold in bread cubes, pecans, dates, and raisins. Fold in stiffly beaten egg whites. Pour into a greased 10 x 6 inch pan. Bake at 325 degrees for 45 to 50 minutes or until knife inserted near center comes out clean. Serve warm with whipped cream. Makes 8 servings. |
