BAKED BEANS WITH BROWN SUGAR -
"BEST EVER"
 
1 large (4 lb.) or 4 reg. (16 oz. ea) cans baked beans (store brand OK)
3 slices bacon
1 onion
1/2 green pepper
1/2 to 3/4 cups brown sugar
ketchup
yellow mustard
1 lemon

1. Fry bacon crispy - crumble and put aside.

2. Dice onion and 1/2 of green pepper.

3. Sauté diced green pepper and onion in bacon grease. Drain.

4. Place beans in large mixing bowl.

5. Add brown sugar, reserved bacon, onion, and green pepper.

6. Add 2 to 3 squirts of ketchup.

7. Add one light squirt of mustard.

8. Crumble bacon and add to mixing bowl.

9. Mix together well and TASTE. Optional - Add more brown sugar for sweeter taste. May want to add more ketchup. Too much ketchup is not a problem. However, cannot undo too much mustard.

10. Place in large casserole dish.

11. Slice lemon and place slices on top of beans.

12. Bake uncovered 35-45 minutes at 350°F or one hour at 325°F. Beans are ready when bubbling.

Serves 8 to 12
